Okay, before I even begin with this recipe, I have several disclaimers:
1. I realize that the name Irish Carbomb Cupcakes could be offensive. No need to call me out on that. The name of the cupcake purely comes from the name of the American drink… a shot of Bailey’s (Irish cream) with a Jameson (Irish whiskey) floater dropped into a half pint of Guinness (Irish stout) and chugged before it can all curdle. You’ll see why these incredibly delicious are called as such shortly.
2. I don’t have a step-by-step. Sorry. I made these at work on St. Patty’s Day and didn’t have time to take pictures. All you get is the end result…
3. To top it off, I’m not even going to post the recipe, because I got it directly from here: Smitten Kitchen’s Chocolate Whiskey & Beer Cupcakes.
St. Patty’s Day is well over (obvi), but these cupcakes really need to make an appearance more than once a year anyways. Your brother loves Guinness and it’s his birthday? PERFECT. Your father-in-law has a weakness for Jameson (not that mine does) and it’s a random Saturday? EVEN BETTER.
These guys consist of chocolate cake with Guinness baked in, a chocolate-Jameson ganache filling and Bailey’s buttercream frosting. Time consuming to make, but… To. Die. For. I’ve made these twice now, and the second time I used the Caramel Bailey’s… even better than the original.
